Must-Try Potluck Recipes for the Summer!

There are few things better than gathering with friends over food on a lazy Saturday afternoon. And if said friends are food bloggers, you definitely know it’s going to be a good day. Time to wear your stretchy pants!

I am so happy that I had the lucky fortune of being able to attend a potluck with some of my favorite bloggers here in the Dallas-Fort Worth area. Let me tell you, there is something so inexplicably magical about connecting with like-minded individuals whom you’ve admired from afar and whose photography and recipe development skills you’ve gushed over many a time.

I have rounded up the recipes for you to draw inspiration from the next time you go to a potluck .. or really, are just in the mood to cook. Trust me when I say these do not disappoint – there’s something for everyone.

Grilled Peach Bruschetta from The Speckled Palate

Grilled Peach Bruschetta is a perfect sweet appetizer or dessert for the summertime. Fire up the grill, slice and pit a few fresh peaches, brush the peaches with a little bit of olive oil, then grill until the sugars in the fruit caramelizes. Grill the bread, too. When both are done, smear the bread with fresh ricotta cheese, place the peach slices on top of the cheese, then drizzle with a balsamic vinegar reduction for the final touch. Perfect!

Bonus: If you don’t have time to (or aren’t in the mood to) make something from scratch – fear not! Purchasing something is always an option; don’t be afraid to make it your own, either. This is exactly what Sweating with Stacy did by making homemade sauce for vegetarian meatballs from Trader Joe’s. Or some beverages, baked goodies, or a cheese board, perhaps? It’s hard to go wrong with options like these.
